BED & BREAKFAST RECIPES


It's that time again, here's one of our favorite guest recipes at the Night Swan Intracoastal B & B!
For your culinary delights we present......





CARAMEL APPLE FRENCH TOAST Makes 1 8x8 pan
350 F. Serves 4-5

1/4 cup brown sugar
1/4 cup butter
1 tablespoon light corn syrup
1/2 cup chopped pecans

12 slices French bread (Thin Sliced)
4 apples, thinly sliced

1 cup egg-white
1 cup skim milk
1/2 teaspoon vanilla

cinnamon and nutmeg - sprinkled on top

Combine brown sugar, butter, and corn syrup in 8x8 glass pan (Spray sides with Pam) and cook in microwave for 30 seconds. Stir. Sprinkle with 1/2 cup coarsely chopped pecans.

Place one layer thin-sliced French bread on syrup and pecans. Fill in with bread as needed. Top with sliced apples, not overlapping. Place second layer of sliced French Bread on top of apples, and another layer of apples.

Combine eggs, milk and vanilla, then pour over layers. Sprinkle with cinnamon and nutmeg. Cover with plastic wrap and refrigerate overnight. Bake uncovered for 50 minutes at 350 degrees. Each person is served one double layer serving. Flip over each individual portion to serve. It can also be served with whipped cream.

We would like to share one of our favorite parks with you! On our Night Swan Intracoastal B & B innkeepers days off, they can generally be found out enjoying our beautiful beach or one of the many great parks in the area. Here is an article about one of their top picks!


Trekking to the Top of Turtle Mound in New Smyrna Beach, Florida

Turtle Mound is not a natural feature. The site was constructed over a period of years by the indigenous people of the area dumping oyster shells in one
location. Today the mound rises to about 50' high. The surrounding palmetto scrub, prickly pear cacti, stinking skunk cabbage, non-native papaya trees, wild orange trees and other indigenous plants make a formidable barrier of vegetation across the mound. It's hard to imagine how the native Timucuan people were able to hunt and gather in such hostile surroundings. Intrepid explorers today have easy access to the top by way of an elevated wooden boardwalk. On a sunny day, the mound offers the views of the circling turkey vultures above, Mosquito Lagoon to the west, the Atlantic Ocean to the east, Canaveral Seashore Park to the south and the encroaching condominiums from New Smyrna Beach to the north, (Scarborough).

New Smyrna Beach Parks


This is such a wonderful time of the year to explore our area parks! The children are back in school, the crowds are gone, and the beach is peaceful and gorgeous! We have a few suggestions for you!





Smyrna Dunes Park

Visitors to Smyrna Dunes Park may arrive by land or by sea. Perched on 73 acres of pristine land at the northern tip of the New Smyrna Beach peninsula, the area is surrounded by water on three sides. Waters from the Indian River flow through Ponce Inlet and into the Atlantic Ocean providing a variety of fishing, swimming, and boating venues for park goers.

The park also provides a unique opportunity for naturalists, ecologists, students and the general public to see a wide variety of animals, birds, reptiles, marine life and vegetation in their natural habitat. To protect the natural habitat as well as the sensitive sand dunes, more than two miles of elevated boardwalks, picnic areas, pavilions and an observation tower have been erected,
allowing visitors to travel through the park in a natural environment.

The park consists of five ecosystems (ocean, river, dunes, scrub zone, saltwater marsh). The principal system is vast sand dunes.

Smyrna Dunes Park is one of a few parks where man’s best friend may enjoy the amenities. However, pets must be leashed at all times. Guided nature walks and educational programs are available. Admission is $5.00 for vehicles of eight passengers or less. Yearly passes are available.

Bed and Breakfast Recipes


It's another brand new month here at the Night Swan Intracoastal B & B in spectacular New Smyrna Beach, Florida! That means it's time for a new recipe!! We have had lots of requests for this one, so, without further adieu.....





Breakfast Enchi
ladas!
  • 1 lb turkey sausage
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 10 (8 inch) medium flour tortillas
  • 1 1/4 cups grated cheddar cheese, divided
  • 6 large eggs, or 1 1/2 cup egg-white
  • 1 tablespoon flour
  • 2 cups half-and-half cream
  • 1 pinch cayenne or white pepper
  • 1 teaspoon fresh ground black pepper (or to taste)


Serve with:
  • sour cream
  • salsa

1. Grease 2 8x8 baking dishes. 2. In a skillet over medium-high heat cook the sausage with onion and carrot, crumbling the meat while cooking, until completely cooked; cool completely. 3. Place about 1/3 cup of the cooked sausage mixture down the center of each tortilla. 4. Sprinkle the mixture with about 2 tablespoons shredded cheese (can use more). 5. Roll up each tortilla and place seam-side down into the casserole dish. 6. In a bowl whisk together flour with half and half cream, cayenne pepper, and black pepper until well combined. 7. In a bowl whisk the eggs with flour, cream, cayenne and black pepper. 8. Pour over the top of the tortillas. Sprinkle about 1 1/2 cups of shredded cheese on top (can use more or less). 9. Cover foil and refrigerate for 1 hour or overnight. 10. Remove from the refrigerator 45 minutes before baking. 11. When ready to bake set oven to 350 degrees F. 12. Cover with foil and bake for 35 minutes, then uncover and continue to bake for another 15 minutes. 13. Let stand 15 minutes before serving. 14. Serve with sour cream and salsa.

Here are some New Smyrna Beach, Florida Fun Facts!


The city motto is "a swan among ducks" .....of course we love that!!

Our coast is called "The Fun Coast" ...........we tend to agree!!
  • Some of our famous residents have included Al Capone, John Travolta, Neil Young, Bob Ross (Painter), Eddie Money, Kathie Lee Gifford, Aaron Cormican (Surfer) and S. Truett Cathy (Chic-fil-A), Jack Mitchell, (photographer).
  • In 2009, our population was estimated to be 23,376.....plenty of room for more!!
  • We have several Tropical Microclimates here where Banana Trees and Coconut Palms grow! ....we put those bananas in our Banana French Toast which we serve for breakfast....Yummy!!
