New Smyrna Beach Bed & Breakfast Recipe

We decided to share a guest favorite for our New Smyrna Beach Bed & Breakfast recipe collection from the Night Swan Intracoastal Bed & Breakfast. This month's selection is our Artichoke & Turkey Ham Strata! We like to serve this with our fresh baked Cottage Cheese Bread and a selection of fresh mixed fruit. We hope you enjoy it as much as our guests do!

ke & Turkey Ham Strata

1 8x8 pan

350 degrees

55 minutes


3 English Muffins, split and quartered

1 Tbs melted butter (or Grill On)

1/2 Cup ground turkey ham (about 4 oz)

1/2 Cup (2 oz) grated fresh Parmesan Cheese

2 Tbs chopped fresh chives

1 (14 - oz) can artichoke hearts, drained and chopped

1 tsp garlic cloves, minced

1/8 tsp ground nutmeg

1 (12 - oz) can evaporated fat-free milk

3/4 Cup Egg-White

Arrange muffin pieces, crust sides down, in an 8x8 baking dish coated with cooking spray; drizzle with butter. Arrange ham and next 4 ingredients (ham through garlic) over muffin pieces.

Combine nutmeg and remaining ingredients in a bowl; stir well with a whisk. Pour over muffin mixture. Cover; chill 8 hours or overnight.

Preheat oven to 350 degrees. Uncover strata; bake at 350 for 55 minutes or until set. Let stand 10 minutes.

New Smyrna Beach Bed and Breakfast Recipe for March!

This month's recipe from the Night Swan Intracoastal Bed & Breakfast is a special request for our homemade Parmesan Peppercorn bread! We hope you'll enjoy it as much as our guests do! PARMESAN PEPPERCORN BREAD
1c water, 80-90 degrees
3T olive oil
1t salt
3c bread flour
1/2c grated parmesan cheese
1/2t freshly ground black pepper
2 1/4t yeast, active dry

Place the ingredients, in the order listed in a bread machine. Select light or medium crust on the bread machine. Remove paddle when kneading is complete. When finished baking, transfer bread to cool on a wire rack. Bread slices best when allowed to cool.

New Smyrna Beach Bed and Breakfast Recipe Bonus

Well, we were asked by one of our guests, so nicely, to publish a recipe that we are skipping protocol and adding another one for January!

Night Swan Intracoastal Bed & Breakfast Egg & Cheese Bake











EGG AND CHEESE BAKE

Makes 1 8x8 pan

325 F. 1 hr

1 1/4 cup egg-white

5/8 cup skim milk

1 teaspoon sugar

8 oz. light Monterey Jack, grated

2 oz. light cream cheese, cubed

8oz. non-fat small curd cottage cheese

2 tablespoons margarine

1/4 cup all-purpose flour

1/2 teaspoon baking powder

Beat together eggs, milk, and sugar. Add the cheeses and margarine. Mix well (5 minutes), then add the flour and baking powder. Mix for a short time. Pour into a greased (Pam) 8x8 inch glass baking dish. Bake in a 325 degree oven for 60 minutes or until knife inserted in the center comes out clean. This may be made ahead of time and refrigerated. Let stand 10 minutes. Serves 4-5.

BED & BREAKFAST RECIPES


It's that time again, here's one of our favorite guest recipes at the Night Swan Intracoastal B & B!
For your culinary delights we present......





CARAMEL APPLE FRENCH TOAST Makes 1 8x8 pan
350 F. Serves 4-5

1/4 cup brown sugar
1/4 cup butter
1 tablespoon light corn syrup
1/2 cup chopped pecans

12 slices French bread (Thin Sliced)
4 apples, thinly sliced

1 cup egg-white
1 cup skim milk
1/2 teaspoon vanilla

cinnamon and nutmeg - sprinkled on top

Combine brown sugar, butter, and corn syrup in 8x8 glass pan (Spray sides with Pam) and cook in microwave for 30 seconds. Stir. Sprinkle with 1/2 cup coarsely chopped pecans.

Place one layer thin-sliced French bread on syrup and pecans. Fill in with bread as needed. Top with sliced apples, not overlapping. Place second layer of sliced French Bread on top of apples, and another layer of apples.

Combine eggs, milk and vanilla, then pour over layers. Sprinkle with cinnamon and nutmeg. Cover with plastic wrap and refrigerate overnight. Bake uncovered for 50 minutes at 350 degrees. Each person is served one double layer serving. Flip over each individual portion to serve. It can also be served with whipped cream.
