New Smyrna Beach Bed and Breakfast Recipe

The Night Swan Intracoastal Bed & Breakfast in New Smyrna Beach is your home away from home. Each morning, we serve a full, hot breakfast to our guests. We have a delicious entree, fresh fruit, and homemade bread. This month's recipe selection is our wonderful Swiss Oatmeal. We serve this as our side fruit, along with our Caramel Apple French Toast. It is hearty enough for a meal in itself! We hope you enjoy!

SWISS OATMEAL
Cold/Serves 6

1/2 Cup Apple Cider or unsweetened apple juice

2 Apples, quartered, cored and coarsely chopped

1 Cup Quick-Cooking Rolled Oats

1 Cup Vanilla Low-Fat Yogurt

2 Tbsp. Sliced Almonds

2 Tbsp. Raisins

1 Tbsp. Dark Brown Sugar - Served on Top

Put the chopped apples into a large bowl with the cider or apple juice and toss the apples to moisten them. Stir in the oats and honey, then add the yogurt, almonds and raisins. Stir to combine the mixture well. Refrigerate for 6 hours or overnight.


Serve the Swiss Oatmeal in individual bowls; sprinkle each serving with brown sugar.

New Smyrna Bed & Breakfast History

Would you like to know a bit of New Smyrna Beach Bed & Breakfast History? Well, since we are partial to our own, we will share with you about the world famous Night Swan Intracoastal Bed & Breakfast!

The name Night Swan, was derived from the origin of the Nighswonger family name from Switzerland.

The Main House was built in 1906. Martha & Chuck Nighswonger purchased the Main House and 2 cottages in 1990. They added 5 bathrooms in the Main House, completely rewired, painted the entire exterior, and began decorating. There are 7 guest rooms, all with a private tile or cultured marble shower bathroom.

The Guest Cottage began as a stable, then a garage, next an apartment in the 1970’s, and the B&B Guest Cottage in 1994. The upstairs features a 2-bedroom suite, and a private, outside deck, overlooking the Intracoastal Waterway. The downstairs suite is large with a king bed, kitchenette, and sitting room, as well as a private outside patio with a great view.


The Cygnet House was built in 1910. It was the Brannon Family home for more than 70 years. The Nighswongers purchased the building in 1997, and were ready for guests in February of 1998. Six guest rooms and a Meeting Room were created, all with a king bed, and an extra-large whirlpool tub and shower.

We now have a nice slideshow of our beautiful inn!

Espresso, Appetizers, and Desserts are available to the public everyday from 10am to 7pm. Come enjoy the views from the front room, the porch or the dock! Other functions, such as meetings, weddings, showers, luncheons, parties, memorial celebrations, etc., may be planned in advance.We have a fireplace in the lobby at the Night Swan Intracoastal Bed & Breakfast. Stop by to grab a cappuccino and get warm!

New Smyrna Beach Bed & Breakfast Christmas Facts

Here at the Night Swan Intracoastal Bed & Breakfast in New Smyrna Beach, Fl., we love Christmas! So, we thought we would share a few Christmas facts with you! We are all decorated for the holiday season so come book a room and get in the Christmas spirit! We are your number one New Smyrna Beach Bed & Breakfast!


  • Ever wondered where the idea of elves came from? They are actually modern day versions of “Nature folk” described in Pagan religions of the past.

  • The Holy Days and Fasting Act of 1551 in Britain declares that all its country's citizens must attend the annual church services held on Christmas day. In fact it goes as far as stating that no vehicle should be used to travel to church on this day. The law still exists on the books, although it is not observed.

  • The tradition of burning a Yule log actually has its roots in ancient Scandinavia. Supposedly the Yule log was a source of good luck and its remnants were saved to inspire good fortune throughout the year. It was such a widely held belief that people even threw the ashes in wells to make the water safer to drink.

  • It was once believed that any woman who went under a mistletoe and was not kissed would not marry the coming year.

  • The annual Christmas pudding was more than just a tasty treat. Small items were placed in them which had the power to predict what the New Year would bring. Coins were associated with a gain in wealth, a ring was a sign of an imminent marriage and a button signified extended bachelorhood. This idea actually goes back to the middle ages where the cake being served on the Twelfth Night would come complete with a hidden bean. Whoever found this bean was declared “king” for that one night.

  • If you counted all the gifts that were given in the song “Twelve Days of Christmas” you would realize that the number of gifts being presented were 364 in total, thus a gift was given for each day of the year.

  • Christmas was illegal in England from 1647-1660. This was enforced by the then leader Oliver Cromwell who believed it was immoral to hold celebrations on one of the holiest days of the year. The celebration of Christmas was therefore a criminal offence which could lead to an individual being arrested if he or she was found guilty of condoning any revelry during the period.

December Bed & Breakfast Recipe



We have had many requests for our delicious Cheese Blintz's and we are sending this out with a special thanks to Pat S. for her request. We serve ours with a cranberry sauce but any berry would compliment this tasty treat! Enjoy!






Cheese Blintz (Breakfast Cheesecake)

1 8x8 pan
350 degrees
50 minutes
1 lb non-fat cottage cheese
3 oz cream cheese, low-fat, softened
1/4 cup melted butter
1/3 cup sugar
1/2 cup flour
3/4 cup egg white
1/2 tsp fresh lemon juice or key lime juice
1/2 tsp baking powder
1/2 tsp cinnamon

Combine cottage cheese, cream cheese, butter and sugar in a medium bowl and mix well. Add the flour, eggs, lemon juice and baking powder and mix thoroughly. Spoon into a greased 8x8 pan.

Bake for 50 minutes or until light brown around the edges and springy to the touch. Sprinkle with cinnamon.

May be served with a berry sauce.

Note: For strawberry sauce, mix sliced strawberries with a small amount of orange marmalade.

2010 Turkey Rod Run!

It's the annual Turkey Rod Run at Daytona International Speedway! Call us for a special room rate at 386-423-4040. It should be a great event this year!!

Where can I buy spectator tickets for the 2010 Turkey Run?
General admission tickets are available at the speedway during show days ONLY, beginning Thursday, November 26. No advance purchase of tickets is available. Admission is $15.00 per day, $10.00 on Sunday. Children 11 and under free.

Are Turkey Run events held anywhere else but the Speedway?

No, there are no Turkey Run events held anywhere else but the Da
ytona International Speedway. Daytime and Nightime. This is a big event and other promoters, bars, shopping centers, time share resorts, etc. are sponsoring auto-themed nightime festivities. They may be called TurkeyTrots, TurkeyFests, TurkeyCruises Turkey TimeShare-a-thons or whatever. They may even have dancing girls and jugglers. They are NOT associated with the Turkey Run. Most of these promoters are fine people that want to give you another place to go in the evening and spend a few bucks, but they are not part of the Turkey Run and cannot sell event tickets or souvenirs.

New Smyrna Beach B&B Recipe

Once again, it's recipe time!! We are offering you another New Smyrna Beach Bed & Breakfast Recipe from the Night Swan Intracoastal Bed & Breakfast! We've received several requests to share our Bacon Wrapped Stuffed English Muffin recipe. We serve this with fresh, seasonal fruit or a fruit shake. Hope you enjoy!!


BACON WRAPPED STUFFED ENGLISH MUFFINS

Makes 4 muffins, 2 servings

500 F. 12-13 minutes

4 sourdough English muffins

1 cup egg whites or 4 beaten eggs

4 tablespoons low-fat cheddar cheese, shredded

6 slices turkey bacon

Preheat oven to 500 degrees. Leave muffin whole. Create pointed well in top of muffin with knife. Wrap 1.5 pieces of bacon around each muffin and anchor with toothpicks through the bacon. Place on air pan sprayed with PAM. Put approximately 1 tablespoon cheese in each muffin well, followed by egg white. Bake for 12-13 minutes, until bacon is done and egg is puffy. Enjoy!

Halloween in New Smyrna Beach!

Hey there Blog Followers! We thought we would get you in the spirit for Halloween this year! Come and join us at the Night Swan Intracoastal Bed & Breakfast as we enjoy the holiday! But first, a bit of history about Halloween and "why the carved pumpkins"?

"Without a doubt the most recognizable symbol of Halloween is a pumpkin carved into a jack-o-lantern. To understand the origins of how pumpkin carving began and what it really means we must first take a look at the holiday itself. How long has Halloween been around? Have there always been pumpkins carved? Here are some answers!

For most of the general population it is known as Halloween and is a night for dressing up, telling ghost stories, having spooky parties, trick-or-treating and pumpkin carving. What most people don't know is that Halloween is actually based on an ancient Celtic holiday known as Samhain (pronounced "sow wan"), which means "summer's end".

It was the end of th
e Celtic year, starting at sundown on October 31st and going through to sundown November 1st. It was a night to honor loved ones that had passed on since the veil between their realm and ours is at it's thinnest on that night.

On this magical night, glowing jack-o-lanterns, carved from turnips or gourds, were set on porches and in windows to welcome deceased loved ones, but also to act as protection against malevolent spirits. Burning lumps of coal were used inside as a source of light, later to be replaced by candles.

When European settlers, particularly the Irish, arrived in American they found the native pumpkin to be larger, easier to carve and seemed the perfect choice for jack-o-lanterns. Halloween didn't really catch on big in this country until the late 1800's and has been celebrated in so many ways ever since!

Pumpkins are indigenous to the western hemisphere and were completely unknown in Europe before the time of Columbus. In 1584, the French explorer Jacques Cartier reported from the St. Lawrence region that he had found "gros melons", which was translated into English as "ponpions," or pumpkins. In fact, pumpkins have been grown in America for over 5,000 years. Native Americans called pumpkins "isquotersquash."

Did you know that pumpkins are not a vegetable - they are a fruit! Pumpkins, like gourds, and other varieties of squash are all members of the Cucurbitacae family , which also includes cucumbers, gherkins, and melons," (pumpkincarving101.com).

BED & BREAKFAST RECIPE


It's October!!



The first of the month is here again so we are bringing you another of our wonderful recipes from the Night Swan Intracoastal Bed & Breakfast! This month we had several requests for our Oatmeal Cranberry White Chocolate Chip Cookies, which are in your room upon arrival! These cookies also freeze well so you can make extra!


Oatmeal Cranberry White Chocolate Chip Cookies

2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 eggs
1-1/2 cups old-fashioned oats
1-1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups Craisins
2/3 cup white chocolate chips


Preheat oven to 375. Beat butter and sugar until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate bowl. Add to the butter mixture in several additions, mixing well after each. Stir in Craisins and white chocolate chips. For flatter cookies, drop by rounded tablespoonfuls onto ungreased cookie sheets, and flatten before baking. Bake for 10-12 minutes or until golden. Cool on wire rack. Makes approximately 2 dozen.

COME AND HELP CLEAN THE BEACH!!



All of us are being encouraged to play a role in preserving Volusia County’s beaches by participating in the International Coastal Cleanup from 8:30 – 11:30 AM on Saturday, September 25th. This worldwide annual event, hosted by the Ocean Conservancy, features many locations along the coast for people interested in helping to clean up the beach.


Last year in Volusia County, more than 800 volunteers removed 3,900 pounds of trash from local beaches.

Volunteers can participate in the cleanup at the following locations:

** Bicentennial Park, 1800 N. Oceanshore Blvd., Ormond-by-the-Sea
** Tom Renick Park, 1575 Oceanshore Blvd., Ormond-by-the-Sea Rockefeller Drive off-beach parking area, 442 S. Atlantic Ave., Ormond Beach
** Sun Splash Park, 611 S. Atlantic Ave., Daytona Beach

** Frank Rendon Park, 2705 S. Atlantic Ave., Daytona Beach Shores Toronita off-beach parking area, 4200 S. Atlantic Ave., Wilbur-by-the-Sea

** Winter Haven Park, 4589 S. Atlantic Ave., Ponce Inlet Oceanview off-beach parking area, 4703 S. Atlantic Ave., Ponce Inlet

** North Beach Neighborhood Park, 1100 N. Atlantic Ave., New Smyrna Beach

Residents can register to participate in the cleanup at www.oceanconservancy.org/cleanup.

Pre-registered participants will receive a Coastal Cleanup reusable bag at the end of the event.

Participants should check in between 8:30 and 9 AM next Saturday, at their designated location.

Participants are encouraged to bring used plastic shopping bags to separate recyclables from trash; wear comfortable clothes; and bring drinking water, sunglasses, a hat and sunscreen.

This year, participants also are invited to help coordinate the efforts as “lead volunteers” who will assist with checking people in, explaining the tally cards, distributing supplies and giveaways, and helping compile site data.

ART WORKSHOP IN NEW SMYRNA BEACH

The first workshop is taught by JANE SLIVKA and is entitled "Paint Out Loud Acrylic." It is Sept. 16, 17, & 18, 2010 from 9:00 am to 4:00 pm.

Jane Slivka's passion takes people on a journey through the layered acrylic paints and oversized canvases, to a world beyond what a photo could capture. Jane is a gifted artist, who through the play of light and shadows, brings paint to life with ease and elegance.

BED & BREAKFAST RECIPES


It's that time again, here's one of our favorite guest recipes at the Night Swan Intracoastal B & B!
For your culinary delights we present......





CARAMEL APPLE FRENCH TOAST Makes 1 8x8 pan
350 F. Serves 4-5

1/4 cup brown sugar
1/4 cup butter
1 tablespoon light corn syrup
1/2 cup chopped pecans

12 slices French bread (Thin Sliced)
4 apples, thinly sliced

1 cup egg-white
1 cup skim milk
1/2 teaspoon vanilla

cinnamon and nutmeg - sprinkled on top

Combine brown sugar, butter, and corn syrup in 8x8 glass pan (Spray sides with Pam) and cook in microwave for 30 seconds. Stir. Sprinkle with 1/2 cup coarsely chopped pecans.

Place one layer thin-sliced French bread on syrup and pecans. Fill in with bread as needed. Top with sliced apples, not overlapping. Place second layer of sliced French Bread on top of apples, and another layer of apples.

Combine eggs, milk and vanilla, then pour over layers. Sprinkle with cinnamon and nutmeg. Cover with plastic wrap and refrigerate overnight. Bake uncovered for 50 minutes at 350 degrees. Each person is served one double layer serving. Flip over each individual portion to serve. It can also be served with whipped cream.

Turtle Mound is not a natural feature. The site was constructed over a period of years by the indigenous people of the area dumping oyster shells in one
location. Today the mound rises to about 50' high. The surrounding palmetto scrub, prickly pear cacti, stinking skunk cabbage, non-native papaya trees, wild orange trees and other indigenous plants make a formidable barrier of vegetation across the mound. It's hard to imagine how the native Timucuan people were able to hunt and gather in such hostile surroundings. Intrepid explorers today have easy access to the top by way of an elevated wooden boardwalk. On a sunny day, the mound offers the views of the circling turkey vultures above, Mosquito Lagoon to the west, the Atlantic Ocean to the east, Canaveral Seashore Park to the south and the encroaching condominiums from New Smyrna Beach to the north, (Scarborough).

New Smyrna Beach Parks


This is such a wonderful time of the year to explore our area parks! The children are back in school, the crowds are gone, and the beach is peaceful and gorgeous! We have a few suggestions for you!





Smyrna Dunes Park

Visitors to Smyrna Dunes Park may arrive by land or by sea. Perched on 73 acres of pristine land at the northern tip of the New Smyrna Beach peninsula, the area is surrounded by water on three sides. Waters from the Indian River flow through Ponce Inlet and into the Atlantic Ocean providing a variety of fishing, swimming, and boating venues for park goers.

The park also provides a unique opportunity for naturalists, ecologists, students and the general public to see a wide variety of animals, birds, reptiles, marine life and vegetation in their natural habitat. To protect the natural habitat as well as the sensitive sand dunes, more than two miles of elevated boardwalks, picnic areas, pavilions and an observation tower have been erected,
allowing visitors to travel through the park in a natural environment.

The park consists of five ecosystems (ocean, river, dunes, scrub zone, saltwater marsh). The principal system is vast sand dunes.

Smyrna Dunes Park is one of a few parks where man’s best friend may enjoy the amenities. However, pets must be leashed at all times. Guided nature walks and educational programs are available. Admission is $5.00 for vehicles of eight passengers or less. Yearly passes are available.

Bed and Breakfast Recipes


It's another brand new month here at the Night Swan Intracoastal B & B in spectacular New Smyrna Beach, Florida! That means it's time for a new recipe!! We have had lots of requests for this one, so, without further adieu.....





Breakfast Enchi
ladas!
  • 1 lb turkey sausage
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 10 (8 inch) medium flour tortillas
  • 1 1/4 cups grated cheddar cheese, divided
  • 6 large eggs, or 1 1/2 cup egg-white
  • 1 tablespoon flour
  • 2 cups half-and-half cream
  • 1 pinch cayenne or white pepper
  • 1 teaspoon fresh ground black pepper (or to taste)


Serve with:
  • sour cream
  • salsa

1. Grease 2 8x8 baking dishes. 2. In a skillet over medium-high heat cook the sausage with onion and carrot, crumbling the meat while cooking, until completely cooked; cool completely. 3. Place about 1/3 cup of the cooked sausage mixture down the center of each tortilla. 4. Sprinkle the mixture with about 2 tablespoons shredded cheese (can use more). 5. Roll up each tortilla and place seam-side down into the casserole dish. 6. In a bowl whisk together flour with half and half cream, cayenne pepper, and black pepper until well combined. 7. In a bowl whisk the eggs with flour, cream, cayenne and black pepper. 8. Pour over the top of the tortillas. Sprinkle about 1 1/2 cups of shredded cheese on top (can use more or less). 9. Cover foil and refrigerate for 1 hour or overnight. 10. Remove from the refrigerator 45 minutes before baking. 11. When ready to bake set oven to 350 degrees F. 12. Cover with foil and bake for 35 minutes, then uncover and continue to bake for another 15 minutes. 13. Let stand 15 minutes before serving. 14. Serve with sour cream and salsa.

Our coast is called "The Fun Coast" ...........we tend to agree!!
  • Some of our famous residents have included Al Capone, John Travolta, Neil Young, Bob Ross (Painter), Eddie Money, Kathie Lee Gifford, Aaron Cormican (Surfer) and S. Truett Cathy (Chic-fil-A), Jack Mitchell, (photographer).
  • In 2009, our population was estimated to be 23,376.....plenty of room for more!!
  • We have several Tropical Microclimates here where Banana Trees and Coconut Palms grow! ....we put those bananas in our Banana French Toast which we serve for breakfast....Yummy!!

Bed & Breakfast Recipes

It's that time again! Time for you to have a relaxing get away at The Night Swan Intracoastal B & B!! There are special rates available this month, so come on over!!

And just to entice you, we are sharing another of our wonderful breakfast recipes with you. The best part is, we will prepare it, cook it, serve it, and clean up!! Just enjoy!!

Grilled Peaches - A wonderful Summertime treat! We are serving them today!!

Dressing:

2 Tbs. brown sugar 

2 Tbs. olive oil 

2 Tbs. lime juice 

1 tsp. vanilla 




1 peach per person, halved and pitted.

Spray the grill and preheat to 350 degrees. Grill peaches cut side down first for 3 minutes. Flip and heat 3 or more minutes on other side. 

Whisk all dressing ingredients and heat in microwave for 40 seconds or until the sugar's dissolved. 

To serve, place two halves in dish and drizzle with sauce. Garnish with fresh mint sprigs, if desired.

New Smyrna Beach Activitites!!

Seaside Fiesta - a fun start to the summer season!!

Stay with us at The Night Swan Intracoastal B&B and receive your third night free (midweek special)!!!


Seaside Fiesta is a fun-filled family street party held the third Thursday in June on Flagler Avenue in New Smyrna Beach. The 22nd annual Seaside Fiesta will be held from 5-9 p.m. Thursday, June 17, and thousands are expected to celebrate the start of the summer season with food, drink, games and music.

Most Flagler Avenue businesses will remain open and there will be plenty of games for kids of all ages and lots of food choices for everyone. Restaurants on the street will be open and festival food vendors will offer everything from fresh squeezed lemonade to kettle corn; Gran Arepas to steak and onion subs, and everything in-between.

DJ Slimmer will be set up on the porch of the CorMeth Boutique. The performance area at Peninsula and Flagler avenues will feature local youth groups. The schedule is:
5:30 Max Athletics
6:00 Terri's Twirlers
6:30 Dance Factory
7:00 Max Athletics
8:00 Terri's Twirlers

At the other end of the avenue, at Seaside Station (just east of Atlantic Avenue), Radio Disney with offer music, games, and prizes. Treats on the Beach will be holding an ice cream eating contest in conjunction with Radio Disney from 6:30-7:30 p.m.

The Christian Rock Band "Holy Smoke" will be featured at the gazebo at the corner of Flagler Avenue and Pine Street. This favorite local group performs every year and will entertain throughout the evening.

Event Happens: June 25, 2010  3:30 PM-10:00 PM

Bring Dad to Hidden Lakes Golf Club's first annual "Howl at the Moon" Glow Ball Tournament! Bring out the inner beast in Dad! This is a tournament for "Golfer's", and "Gofer's" who are are not familiar with the game of golf, and we have designed a "Gofer" course just for you! Format: A four (4) person team- 18 Hole Best Ball Scramble. The first 9 holes will be played during daylight hours. The second nine holes will be played after sunset. Dinner and skill activities will be scheduled between "Day" and "Night" 9's. All players will need to provide their own flashlights. Fun Things to do in New Smyrna Beach!!

We have some great ideas for fun things to do in New Smyrna Beach! The kids are out of school and they are ready for action! Bring them to the beach and enjoy all that our quaint town has to offer. There are plenty of activities for the whole family!
How about teaching the youngsters about Bird Watching in New Smyrna Beach? Did you know that our local state park, Canaveral National Seashore, is home to more than 400 different bird species! What a fun & educational activity! It would also make a great scrap booking project....bird photos....bird sketches.... hmmmm.

We have so many Father's Day ideas for you for Father's Day 2010! Sign up for our newsletter for more info. Enjoy some fishing tournaments, lots of golf, a car show, and sea turtles on the beach!

Here is one of our famous breakfast recipes! We will be adding a new one every month, so make sure you stay tuned!

Turkey Sausage Pinwheels 


2 cups biscuit mix 

1/2 cup milk

1/4 cup butter 

1 pound ground turkey sausage 



Combine biscuit mix, milk and butter in large bowl until blended. Refrigerate 30 minutes. Divide dough into two portions. Roll out one portion on floured surface to 1/8-inch-thick rectangle, about 10x7 inches. Spread with half the sausage. Roll lengthwise into long roll. Repeat with remaining dough and sausage. Wrap with foil, place rolls in freezer until hard enough to cut easily. Cut into 1/4 inch pieces. Store in freezer in small quantities. 

 Defrost before baking, 3-4 per person. 

Preheat oven to 400 F. Place pinwheels on baking sheets. Bake 7 minutes, turn over, and bake 7 more minutes or until golden brown. Serve Hot. Refrigerate leftovers.

Fishing Tournament, New Smyrna Beach


The Redfish-Trout Challenge and the Striker Offshore Tournament come to New Smyrna Beach for Memorial Day Weekend. These two fishing contests attract nearly 1,000 competitive anglers from throughout the country, competing for thousands of dollars in cash and prizes.

The Striker Fish Tournament focuses on the wahoo, tuna, dolphin and king mackerel.

Hell’s Bay Boatworks has designed and built a release tank, which provides 6,000 gallons of water per hour, identical to the fish’s original environment. Because the tank is located on a floating dock, the fish are taken to the shallow-water estuary and allowed to recover fully before being released back into their environment.

FishStock is a four-day festival that brings together two of the top saltwater fishing tournaments in the nation, along with all the excitement of the onshore festivities at the FishStock Village. The annual event will be held at Riverside Park in New Smyrna Beach, Florida, on May 27-30.
